Breakfast Sausage Bites by Uncle Kev
Directions
Preheat oven to 350. Slice the crusts off the bread and flatten with a rolling pin. Spray both sides of bread with cooking spray. Cut the bread in triangles. Cook the sausage, crumble it as it cooks. Drain and let cool. In a large bowl, mix the onion, jalapeno, cheese and sausage together. Scoop about a tablespoon of mix into each bread triangle. Fold bread around mix. Cook for about 10-15 minutes on a cookie sheet. The bread will brown and look crunchy when it is done.
Ingredients
18 slices white bread
1 pkg. Owens country sausage (original)
2 fresh jalapenos, seeded and chopped
1 8 oz. pkg. sharp cheddar cheese, grated
1 med. white onion, chopped
cooking spray
This discovery was a complete accident. One year I was cooking stuffing for the yearly turkey fry my friends and I have the Sunday before Thanksgiving. I had a little leftover breakfast sausage from the stuffing I made. I was thinking of something I could do with it so it does not go to waste. Three things I almost always have are onions, jalapenos and sharp cheddar cheese. I mixed it all together, rolled out some bread to create a shell. And viola, this delicious appetizer came to be. I am usually so busy prepping other food for the party, so one year I tried to cheat and use puff pastry. They were okay, but not nearly as the pin-rolled white bread. People beg me to create these and so will your guests once you serve them.
